I wanted to share my version of some peanut butter treats that my daughter, Kenzie, really liked.
It’s a tough call. They are both no bake, easy to make, and are very peanut buttery. Just the texture and a few ingredients are different. Overall, I think both are pretty healthy. Of course, you don’t want to eat the entire batch or anything. That would defeat the whole healthy-thing.
Not that you couldn’t eat the entire batch…. they are pretty addicting.
Peanut Butter And Honey Oat Balls
1/4 cup coconut oil
1/4 cup honey
1/4 cup + 1 Tbsp peanut butter
1 tsp vanilla
2 1/4 cups rolled oats
1/4 cup mini chocolate chips
2 – 3 Tbsp tiny colored sprinkles (optional – they just look cute)
Heat coconut oil, honey, and peanut butter for a few seconds, until creamy.
Stir in vanilla.
Stir in oats until very well combined. Let cool about 5 minutes so the mini chocolate chips won’t melt when you add them.
Stir in the mini chocolate chips and the sprinkles. Using a small cookie scoop (or just pinch off a ping pong ball sized amount) roll into balls – pressing fairly firmly to get them to hold their shape.
Let sit on plastic wrap or waxed paper/parchment paper until firm.
It’s that simple.
Start to finish in about 15 minutes – then another 15 or so to let them firm up.
The kids loved these. I think they would also work really well as an energy boost on a hike, etc…
If you make sure you buy the gluten free chocolate chips/sprinkles then this is also a gluten free recipe – if that is a thing for you.
I know they look a little Christmas-y in the photos. I only had red and green sprinkles to add in. You can add whatever color you like to suit the season…or leave them out and just go with the mini chocolate chips.
You could probably even sub out the chocolate chips for finely chopped nuts or dried fruit, if you prefer. Or maple syrup for the honey.
It’s a pretty forgiving recipe.
